Love at First Bite: Chocolate PB Energy Bites

Y’all know by now that I’m a fan of grab-and-go and easy meal prep. It’s also pretty obvious that I love having my daily chocolate! Therefore… a super-simple recipe for a solid batch of a chocolatey snack only makes sense.

One of my favorite things to combine with chocolate is peanut butter, so that’s what I mixed together to create these Chocolate Peanut Butter Energy Bites! They take less than 30 minutes to make (including setting time), require just a handful of ingredients, and set you up with the perfect ready-to-go snack all week long!

Another great thing about these is that they help keep your blood sugar balanced (something you learn in-depth in my gutTogether program), and have gut-loving ingredients like cacao and flax seeds. Your taste buds AND your digestive system will thank you!

Chocolate PB Energy Bites

Total Time 25 minutes
Servings 16 bites

Ingredients
  

  • 1 cup Quick Oats
  • 1/2 cup Ground Flax Seed
  • 2 tbsp Cacao Powder
  • 1/4 tsp Sea Salt
  • 1/2 cup Peanut Butter
  • 1/3 cup Maple Syrup
  • 1 tbsp Unsweetened Almond Milk optional

Instructions
 

  • In a large mixing bowl combine oats, flax, cacao powder, sea salt, peanut butter and maple syrup. Add almond milk if the dough is too thick and sticky.
  • Roll the dough into balls about 1-inch in diameter. Chill in the fridge for at least 20 minutes before serving. Enjoy!
